Thai Green Curry

This is probably one of the first dishes that made me fall in love with the culinary world. I first learnt to make it when I was pretty young. It is so simple to make and it forces you to eat your veggies!! Thai food has always been my comfort food and it is one of the most accesible cuisines for vegans. If you are a beginner, make sure you give this recipe a go!

  • 2 cups Coconut milk
  • 1 cup Veg stock
  • 1 cup Carrots chopped
  • 1 cup Brocolli florets
  • 1 cup Mushrooms sliced
  • 1 cup Snow peas
  • 1 cup Bell peppers assorted
  • 4-6 tbsp Thai Green Curry Paste
  • 2 tbsp Vegetable oil
  • 2 tbsp Coconut Cream (optional)
  • 7 Lime leaves halved
  • 3 cloves Garlic minced
  • 3 Red chillies chopped
  • 1 tsp Ginger minced


  • Heat oil in a pot over medium heat and add garlic, ginger and chillies.
  • When garlic starts to brown, add all the veggies, lime leaves, season with some salt and toss for 2 minutes.
  • Mix the Green Curry Paste into the veggies and toss for another minute.
  • Pour veg stock, coconut milk and coconut cream in the pot.
  • Bring to a light simmer and take off the heat.
  • Serve hot with a side of rice and garnish with some corriander, chopped lime leaves and some chilli (optional).
